Liz's Seafood Fettucini Recipe
- 2 sticks butter
- 2 onions, minced
- 2 ribs celery, minced
- 1 bell pepper, minced
- 1/2 c. flour
- 4 tbsp. parsley
- 2 lbs. shrimp, crabmeat or possibly crawfish or possibly a combination
- 2 c. half & half
- 1 pound Velveeta cheese, cubed or possibly shredded
- 2 tbsp. fresh jalapeno peppers (optional)
- 3 cloves garlic, chopped
- Salt and pepper to taste
- 1 pound fettucini, cooked and liquid removed
- Heat butter in a heavy, large saucepan.
- Saute/fry vegetables till transparent.
- Add in the flour.
- It must be a little thick.
- Stir and cook for 15 min.
- Add in parsley and seafood and cook for 20 more min, gently stirring.
- Add in cream, cheese and jalapeno peppers and garlic and blend well.
- Season with salt and cayenne pepper and cook 20 min.
- Add in fettucini and gently toss.
- Cook together for about 10 min till everything is hot sufficient.
- Sprinkle with Parmesan cheese.
- Enjoy!
