Super Quick Spinach Lasagna

  1. Cook pasta until just tender.
  2. Drain and set aside.
  3. In a large saucepan, cook spinach in 3 cups water.
  4. Drain, reserving 1 cup of the cooking liquid.
  5. To assemble, cover the bottom of a 9x13 baking dish with some of the sauce.
  6. Arrange a layer of noodles in the dish, overlapping slightly.
  7. Spread half of the ricotta over the noodles.
  8. Season with half of the salt and pepper.
  9. Top with half of the spinach.
  10. Sprinkle with half of the pine nuts.
  11. Cover with 1 cup of spaghetti sauce.
  12. Repeat layering process until all the ingredients are used.
  13. In a bowl, dilute any remaining spaghetti sauce with reserved spinach cooking liquid.
  14. Pour over assembled lasagna.
  15. Sprinkle with Parmesan cheese and cover with foil.
  16. Bake for 25 minutes at 375.
  17. Remove foil and bake for 10 more minutes.
