Vegetable Linguine With Blue Cheese
- 1 lb linguine, cooked
- 1 cup roma tomato, diced
- 12 cup zucchini, diced
- 12 cup summer squash, diced
- 14 cup yellow bell pepper, diced
- 14 cup red bell pepper, diced
- 1 garlic clove, minced
- 12 tablespoon garlic salt
- 12 tablespoon dried basil
- 1 tablespoon dried parsley
- 14 cup blue cheese, crumbled
- 14 cup red wine vinegar
- Start pasta boiling.
- Meanwhile, mix all remaining ingredients in a bowl.
- When past is done, mix in with the veggie/cheese mixture.
- Place in an oven safe casserole dish.
- Bake at 325F for 30 minutes.
