Apple Butter

  1. Combine apples and cider in a large stockpot; bring to a boil.
  2. Reduce heat, and simmer, partially covered, 30 minutes or until apples are tender.
  3. Place apple mixture in a food processor; pulse 6 times or until chunky.
  4. Return to pan.
  5. Stir in sugar and remaining ingredients.
  6. Cook over low heat 1 hour or until thick, stirring occasionally.
  7. Discard cinnamon and star anise.
  8. Cover and chill.
  9. Note: Store in an airtight container in refrigerator for up to 1 month.
