Chickpea Stew (Kikhernemuhennos)

  1. Cook onion, pepper and garlic in olive oil until onion starts to turn translucent.
  2. Add chickpeas and curry powder.
  3. Cook for a moment longer.
  4. Add coconut milk and allow to simmer, covered, for a few minutes.
  5. Garnish with parsley, and serve with prepared couscous.
