Fruited White and Wild Rice

  1. Bring water to a boil with butter and salt.
  2. Add white and wild rice blend and golden raisins, stir, return to a boil.
  3. Reduce heat, cover the pan and simmer 20 minutes or until just tender.
  4. Fluff rice with a fork.
  5. Add chopped mandarins, almonds and scallions to the rice.
  6. Toss fruited rice to combine and serve.
