New South Ambrosia

  1. Note: cut oranges into bite size.
  2. Remove the pith.
  3. Leave the outer membrane on the grapefruit.
  4. Keep only the juice of the lemons.
  5. Divide all into 2 portions.
  6. Place half the fruit in the bowl.
  7. Sprinkle juice, coconut and pecans on top.
  8. Layer the rest of the fruit, coconut and pecans.
  9. Cover and chill at least 2 hours up to 24 hours before serving.
  10. Sprinkle the coconut, mint and cherries on top before you serve.
