Ginger Pork With Peach Chutney
- 1 lb pork tenderloin
- 14 teaspoon salt
- 18 teaspoon pepper
- 1 teaspoon oil
- 13 cup peach chutney (sub mango chutney)
- 3 tablespoons orange juice
- 1 teaspoon ginger, fresh grated
- 12 teaspoon five-spice powder
- Trim fat from loin.
- Cut crosswise into 8 slices.
- Flatten slightly with palm of hand.
- Sprinkle with salt & pepper.
- Heat oil in medium skillet over medium-high heat.
- Cook pork about 4 minutes, turning halfway.
- Stir in remaining ingredients, reduce heat.
- Cover and simmer 4-6 minutes or until 160.
- Set aside pork and continue to cook sauce for 1-2 minutes, stirring constantly.
- Serve over pork.
