Ginger Pork With Peach Chutney

  1. Trim fat from loin.
  2. Cut crosswise into 8 slices.
  3. Flatten slightly with palm of hand.
  4. Sprinkle with salt & pepper.
  5. Heat oil in medium skillet over medium-high heat.
  6. Cook pork about 4 minutes, turning halfway.
  7. Stir in remaining ingredients, reduce heat.
  8. Cover and simmer 4-6 minutes or until 160.
  9. Set aside pork and continue to cook sauce for 1-2 minutes, stirring constantly.
  10. Serve over pork.
