Breakfast Burritos
- 1 lb spicy ground sausage
- 1 lb shredded hash brown
- 8 large eggs
- 2 cups shredded cheddar cheese
- 10 small tortillas
- 2 garlic cloves, minced
- salt and pepper
- Heat skillet to medium and brown sausage.
- Drain sausage on a paper towel lined plate.
- In the same skillet that is greased from the sausage, heat to medium-high.
- add hash browns and cook them, (make sure they are in a single layer).
- Press the hash browns down with a spatula to compress.
- flip and cook until brown on both sides, set to the side.
- add 8 eggs, 1/4 cup water, minced garlic, and salt & pepper to taste to a large mixing bowl.
- Whisk until consistent.
- reduce heat to medium-low and scramble the eggs.
- lay out the tortillas, add sausage then shredded potatoes, then scrambled eggs, and top with cheese.
- fold and roll burritos.
- wrap in saran wrap then put all burritos into a freezer safe bag.
