Poached Flounder Hollandaise Recipe

  1. Arrange fish in a 10 inch skillet; add in boiling water, salt, onion and bay leaf.
  2. Cover and simmer 5 - 10 min, till fish flakes easily with a fork.
  3. Remove fish from liquid carefully with a slotted spoon; place on serving platter and keep hot.
  4. Heat butter in saucepan, blend in flour, cayenne pepper, and 1/4 teaspoon salt.
  5. Gradually stir in 1/2 c. lowfat milk and 1/2 c. water, cook, stirring constantly, till smooth and thickened.
  6. Stir half of warm mix into beaten egg yolks.
  7. Blend into warm mix in saucepan; cook about 1 minute.
  8. Remove from heat; stir in lemon juice and peel.
  9. Serve over fish.
  10. Garnish with parsley.
