Honey and cinnamon roasted sweet potatoes and pecans

  1. Preheat oven to 375
  2. Combine honey, olive oil, cinnamon and vanilla to a bowl and mix well.
  3. Peel and chop sweet potatoes into small cubes.
  4. Size doesn't matter as long as it's bite size.
  5. Get a handful of pecans and roughly chop them.
  6. Add sweet potatoes and pecans to honey mixture and stir to coat evenly.
  7. Line a baking sheet with foil and pour sweet potatoes and pecans in a single layer onto the baking sheet.
  8. Whatever mixture is left drizzle it over potatoes.
  9. Bake in preheated oven for 25-30 minutes, stirring halfway through.
  10. When done sprinkle the top with as much brown sugar you want or none at all.
  11. Let cool for 5 minutes then enjoy as a side or dessert.
  12. Your house will smell AMAZING!
