Sauteed Walleye With Citrus Butter

  1. WALLEYE: Rinse walleye and soak in milk for 1 hour.
  2. Season fish with salt and dust in Black Walnut Batter Mix.
  3. Heat oil in large saute pan.
  4. Place fish in pan and cook until golden, approximately 5-6 minutes.
  5. Remove from pan.
  6. Serve with warm Citrus Butter and parsley garnish.
  7. BLACK WALNUT BATTER: Mix all ingredients together.
  8. CITRUS BUTTER: Place garlic and butter in blender and process until well blended.
  9. Transfer to bowl.
  10. Whisk in remaining ingredients.
