Black Forest Brownie Bites Sugar Free
- 4 oz. unsweetened chocolate, chopped
- 2/3 cup unsalted butter
- 1 cup SPLENDA No Calorie Sweetener, Granulated
- 1 tsp. vanilla extract
- 2 lg. eggs
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2/3 cup dried cherries, plus extra for garnish
- 1 cup cream cheese, room temperature
- 2 tbsp. unsalted butter, room temperature
- 1/2 cup SPLENDA No Calorie Sweetener, Granulated
- 1 tsp. vanilla extract
- For brownie bites, preheat oven to 350 degrees F (180 degrees C) and grease a 24-cup mini muffin tin.
- In a small pot over a low heat, melt chocolate and butter, stirring constantly.
- Transfer to a bowl and stir in SPLENDA Granulated.
- Stir in vanilla and eggs.
- In a separate bowl, sift flour, cocoa, baking powder and salt.
- Add dry ingredients to chocolate mixture, stirring just until blended.
- Stir in dried cherries and spoon into prepared mini muffin cups.
- Bake for 15 minutes and cool completely before removing from tin.
- Two dozen brownie bits.
- FROSTING: Beat cream cheese, butter, SPLENDA Granulated and vanilla until smooth.
- Pipe a generous dollop of frosting on each brownie bite and top with a dried cherry.
- Store brownie bites refrigerated for up to 3 days.
