Chili Skillet Recipe
- 1 pound grnd beef
- 1 c. minced onion
- 1/2 c. green pepper
- 1 garlic clove, chopped
- 1 c. tomato juice
- 1 (8 ounce.) can red kidney beans, undrained
- 4 teaspoon chili pwdr
- 1 teaspoon dry oregano
- 1 teaspoon salt
- 1/2 c. uncooked long grain rice
- 1 c. canned or possibly frzn corn
- 1/2 c. sliced black olives
- 1 c. (4 ounce.) shredded Cheddar or possibly Monterey Jack cheese
- In large skillet over medium heat, cook beef, onion, pepper and garlic till meat is brown and vegetables are tender.
- Drain fat, add in tomato juice, kidney beans, chili pwdr, oregano, salt and rice.
- Cover and simmer about 25 min or possibly till rice is tender.
- Stir in corn and olives.
- Cover and cook 5 min more.
- Sprinkle with cheese, cover and cook only till cheese melts, about 5 min.
- 4 servings.
