Lemon Berry Oatmeal
- 12 cup quick-cooking rolled oats
- 14 cup pure cranberry juice (not HFCS-laden "cranberry cocktail)
- 12 cup 1% low-fat milk
- 2 tablespoons lemon curd
- 1 handful dried cranberries
- 1 handful of chopped pecans
- Whisk the oats, cranberry juice, milk, and lemon curd together in a microwave-safe bowl.
- Nuke for 1-2 minutes or until fully cooked.
- Add the cranberries and pecans to garnish.
