Vegetable And Turkey Sandwiches Recipe
- 1/2 c. sliced green pepper
- 1/2 c. tiny cauliflower florets
- 1 med. carrot in short julienne strips
- 1 med. tomato, minced
- 6-8 ripe pitted olives, sliced into circles
- 4 green onions (scallions) cut into sm. strips
- 1/2 c. reduced calorie Italian dressing
- 1/2 teaspoon dry basil, crushed (optional)
- 4 club rolls split
- 4 slices fully cooked turkey breast
- Combine the first 6 ingredients.
- Stir in dressing, sprinkle the basil on top.
- Cover and chill the veggies for 4 hrs or possibly overnight.
- Toast rolls if you like.
- Place turkey on roll, top with 1/4 of vegetable mix.
- Garnish with a leaf of lettuce, serve with hard boiled egg on the side.
