Sig's Spicy Carrot and Butter Bean Soup
- 1 large onion,chopped
- 2 clove smoked garlic
- 450 grams carrots,peeled an thinly sliced
- 1 tin of butter beans
- 1 tsp each ground coriander,ground cumin ,paprika and hot chilli powder
- 900 ml vegetable stock
- 1 pinch salt and fresh ground pepper
- 1 tbsp fresh coriander leaves for garnish
- 30 pecan nuts for garnish
- 1 handful of broad beans for garnish,( optional)
- 20 ml olive oil
- heat oil in pan,add onions ,crushed garlic and carrots,cook for 5 min,add the ground spices simmer for 1 min ,stir.Add stock and cook for about 40 minutes until carrots are cooked
- add the butter beans, cook for another 5-10 minutes.
- puree the soup with blender,season and reheat gently.
- Garnish with pecan nuts and/or broad beans.
