Cremini Mushroom Potato Dish
- 2 garlic cloves, minced
- 2 cups shredded monterey jack cheese, divided
- 1 cup ricotta cheese
- 14 cup finely chopped fresh parsley
- 1 teaspoon dried thyme
- 1 lb potato, sliced (peeled or unpeeled)
- 1 teaspoon salt, divided
- 1 teaspoon fresh ground black pepper, divided
- 1 lb cremini mushroom, sliced
- 2 cups sliced onions
- In a large bowl, combine the garlic, half the Monterey Jack cheese, the ricotta, parsley, and thyme; set aside.
- Arrange potatoes in a single layer in bottom of greased 13 x 9 inch glass baking dish, overlapping as necessary.
- Sprinkle with half each of the salt and pepper.
- Spread the cheese mixture over the potato layer.
- In the same large bowl, combine the mushrooms and onions.
- Layer on top of cheese mixture.
- Sprinkle with remaining salt and pepper.
- Top with the remaining Monterey Jack.
- Bake in a preheated 350 oven for 40-45 minutes or until potatoes are tender when pierced with a fork and top is lightly browned.
