Yasai Yaki Soba Recipe
- 200g cooked soba noodles
- topping: 30g shredded carrots
- 30g thinly-sliced green peppers
- 2 sliced shitake mushrooms
- 1 egg
- seasoning: 1 tablespoon light soy sauce
- A 1/2 teaspoon salt
- 1 teaspoon mirin
- a few drops of sesame oil
- yasai sauce: 1 tablespoon mirin
- A 1/2 tablespoon rice vinegar
- A 1/2 tablespoon light soy sauce
- a few drops sesame oil
- 1 teaspoon each of finely chopped red and green peppers, coriander, and ginger
- garnish: pickles
- sesame seeds
- 1 spring onion, finely chopped
- Put all the ingredients, except the egg, into a bowl with the seasoning and mix them with your hand.
- Then crack the egg into the bowl and mix thoroughly.
- Heat a couple of teaspoons of vegetable oil in a wok or frying pan until the oil starts to smoke.
- Put the mixed ingredients into the hot pan and fry until golden, stirring occasionally with a wooden spoon.
- Combine the ingredients of the yasai sauce and taking it off the heat, mix it with the cooked noodles.
- Then turn the noodles out onto a plate and garnish with pickles, finely chopped spring onion and a sprinkling of sesame seeds.
