Old Fashioned Rice Pudding
- 1/2 cup cholesterol-free egg product
- 1/4 cup sugar
- 1/4 tsp. ground cinnamon
- 1-1/2 cups fat-free milk
- 1/4 cup long-grain white rice
- 1/2 cup seedless raisins
- 1 tsp. vanilla extract
- Combine egg substitute, sugar and cinnamon in small bowl; set aside.
- Heat milk in saucepan just to a boil.
- Stir in rice.
- Return mixture to a boil.
- Reduce heat; cover and simmer for 15 minutes.
- Stir in egg substitute mixture gradually.
- Bring to a boil; reduce heat and simmer, stirring constantly for 2 to 3 minutes or until slightly thickened.
- Stir in raisins and vanilla.
- Spoon into 4 dessert dishes.
- Rice pudding can be served warm or cold.
- Garnish as desired.
