Butterscotch Tapioca Recipe
- 6 c. boiling water
- 1 tsp salt
- 1 1/2 c. small pearl tapioca
- 2 c. brown sugar
- 2 x beaten Large eggs
- 1 c. lowfat milk
- 1/2 c. white sugar
- 1 stk butter
- 1 tsp vanilla
- Bring the water to a boil, add in the salt and tapioca, cook for 15 min.
- Add in the brown sugar.
- Cook until done (Stir often).
- Mix together the Large eggs, lowfat milk and sugar and add in to the tapioca mix.
- Cook till it bubbles.
- Brown the butter and add in vanilla, mix into the tapioca mix.
- Cold and add in whipped cream, bananas, and diced candy bar if you like.
