Katy's Crab Cakes

  1. Melt butter in skillet over medium heat.
  2. Saute onion until opaque, but not brown, about 2 minutes.
  3. In a large bowl, combine stuffing with crab, egg, mustard, salt and pepper, mixing well.
  4. Stir in onion.
  5. Shape mixture into 6 flat cakes.
  6. Sprinkle each lightly with flour (do not dredge).
  7. Brown quickly in butter, reduce heat, and cook gently for 5 minutes.
  8. Serve immediately.
