Zippy Orange Chicken
- 2 Tbsp. KRAFT Light Mayo Reduced Fat Mayonnaise
- 3 oz. boneless skinless chicken breast
- 1/2 medium green pepper
- 2 oz. orange juice
- 2 tsp. packed brown sugar
- 1/3 cup instant brown rice, uncooked
- 1/2 cup canned mandarin oranges (in juice)
- 1/4 cup canned pineapple chunks (in juice)
- 1 cup frozen broccoli cuts
- 1 tsp. trans fat free canola-based soft margarine
- Heat 1 tablespoon of the light mayonnaise in skillet on medium-high heat.
- Add chicken (cut into strips)and green pepper (cut into strips); cook and stir 5 minutes or until chicken is cooked through.
- Drain.
- Reduce heat to medium.
- Mix remaining mayonnaise, orange juice (2 ounces = 1/4 cup) and sugar.
- Stir into skillet; bring to boil.
- Remove from heat; add rice, orange segments and pineapple.
- Let stand, covered, 5 minutes before serving..
- Heat broccoli as directed on package; top with margarine.
