Copy Cat Applebee's Bacon Green Onion Mashed Potatoes
- 4 clove garlic, peeled
- 5 slice bacon, cut into 1/2 inch pieces
- 2 lb potatoes, peeled and cut into 1 inch cubes
- 1 cup very thinly sliced green onions
- 1/2 cup milk, warmed
- 1/2 cup sour cream
- 1/2 to 1 teaspoon salt
- 1/4 tsp pepper
- In a large pot, immerse the potatoes and garlic in water.
- Boil until the potatoes are fork tender, about 30 minutes.
- Fry the bacon in a skillet until crisp.
- Drain on paper towels.
- Pour out all but 1 teaspoon of the bacon drippings from the pan.
- Add the green onion to the drippings, and saute' until soft but not brown.
- Return the bacon to the skillet and stir to combine.
- Drain the, potatoes and garlic and return to the pot.
- Mash the potatoes with the milk, sour cream, salt, and pepper.
- Stir in the bacon and green onions.
- Reheat, if necessary, before serving.
- *If you have already cooked bacon, saute' the green onions in a bit of butter in place of the bacon drippings.
