Lemon Beach Pie
- 1 1/2 sleeves saltines
- 1/2 cup butter, softened
- 3 tbsp sugar
- 14 oz sweetened condensed milk
- 4 egg yolks
- 1/2 cup lemon juice
- 1 cup whipping cream
- 1 sea salt (for garnish)
- Crush or process crackers until fine crumbs (not dust!).
- Add sugar and knead butter in until it forms a loose dough.
- Press into an 8" pie pan and chill for 15 minutes.
- Preheat oven to 350 and bake crust for 18 minutes until lightly browned.
- While crust is cooling, beat together milk and yolks.
- Then beat lemon juice.
- Pour into crust and bake for 16 minutes until filling is completely set.
- Chill pie for several hours.
- Must be completely chilled to slice well.
- Top with fresh whipped cream and sea salt for garnish.
