Dick's Pan Fried Fish Recipe
- 1/2-3/4 pound fish fillets (grouper, yellowtail, snapper, or possibly dolphin etc.)
- 1/8 pound butter
- 2 tbsp. butter
- 1 teaspoon garlic pwdr
- 1 teaspoon dill weed pwdr
- 1 teaspoon grnd dry lemon peel
- Heat butter and butter in a non-stick fry pan - medium heat.
- When melted, add in garlic, dill and lemon peel.
- Stir well with wooden spoon.
- Pat fish dry with paper towels and place in fry pan.
- Using medium to high heat (don't allow seasonings to burn), cook 2-4 min till outer edges of fish turn white.
- Turn fish over and cook till it is easily penetrated with a fork.
- Serve on plates.
- Spoon pan leavings over fish.
