Grasshopper Pie
- 1 1/2 cup Finely crushed oreo cookies, filling included, I used the food processor to crush. (approximately 22 to 24 cookies )
- 3 tbsp melted butter
- 1/2 cup heavy whipping cream
- 32 large marshmallows
- 1/4 cup green cream de menthe
- 3 tbsp white cream de cocoa
- 1/4 tsp green food coloring liquid or a few drops of gel coloring
- 1 1/2 cup chilled heavy whipping cream
- FOR OREO CRUST
- Combine oreo crumbs and melted butter,press in a 9'inche pie crust and up sides.
- Bake in a 350 oven for 10 to 12 minutes until lightly crisp, cool
- FOR PIE FILLING
- In a saucepan combine the 1/2 cup heavy cream with marshmallows, cook over medium heat stirring all the time until melted.
- Transfer to a bowl, add cream de menthe and cream de cocoa and cool to room temperature.
- In a large chilled bowl beat the 1 1/2 cups chilled heavy cream to soft peaks, beat in cooled marshmallow mixture until thick and blended, mound into pie crust and chill for 8 hours or overnight to set.
- GARNISH with sweetened whipped cream and chocolate shavings before serving.
