Honey and Spice Crunch

  1. Pour popcorn into a bowl coated with cooking spray, set aside.
  2. Melt butter in a saucepan over low heat; stir in honey and next 3 ingredients .
  3. Bring to a boil over medium heat; stirring constantly.
  4. Boil; without stirring, 7 minutes or until candy thermometer registers 250F.
  5. Remove from heat .
  6. Stir in cinnamon, soda, and vanilla, pour over popcorn, stirring to coat.
  7. Spoon mixture into a lightly greased 15X10 inch jellyroll pan.
  8. Bake at 250 degrees for 25 minutes or until golden, stirring every 5 minutes.
  9. Stir in dried fruit; cool.
  10. Serve in airtight containers.
