Raspberry Spinach Salad
- 1 lb. spinach
- 2 cups fresh raspberries
- 1/4 cup sugar
- 5-1/2 tbsp. poppy seeds
- 1/4 tsp. paprika
- 1/2 cup vegetable oil
- canola oil
- 1/4 cup raspberry vinegar
- 2 tsp. finely chopped onion
- 1/4 tsp. Worcestershire sauce
- 1/2 cup slivered almonds
- 1/4 cup granulated sugar
- 2 tsp. water
- Combine topping ingredients in frying pan over medium heat until sugar melts to golden brown and coats almonds.
- Turn out on a square of greased foil.
- Combine all other dressing ingedients in container and shake well.
- Wash and dry spinach, place in bowl with spinach and berries.
- Add dressing and almonds and toss.
- (Diced chicken can be added too, as can shrimp.)
