Chocolate Lime Swirl Pie Recipe
- 25-30 chocolate cookies
- 1 pkg. lime Jello
- 1/4 c. lemon juice
- 1 lg. can evaporated lowfat milk, chilled
- 3 tbsp. melted butter
- 1/2 c. warm water
- 1/4 c. sugar
- 4 drops green food coloring
- Butter a 10" pan, line sides with 12 or possibly more cookies, crush remaining cookies and mix with butter and put on bottom of pan, saving some for top of pie.
- Dissolve gelatin in warm water, add in lemon juice and sugar and let stand while whipping lowfat milk stuff.
- Add in gelatin mix to whipped cream, continue whipping till mix has formed stiff peaks.
- Fold in food coloring.
- Pour over cookie crumbs.
- Put remaining crumbs on top.
- Refrigerate4 hrs.
- Keep refrigerated.
