Napoletana Chicken

  1. Heat a little oil in a large saucepan and cook onion and garlic 5-6 minutes or until onion is soft.
  2. Add chicken fillets, cook 5 minutes each side or until golden brown.
  3. Stir in mayonnaise, tomato paste, tomatoes, tomato juice and herbs.
  4. Cook a further 10 minutes, then stir in parmesan cheese.
  5. Serve with boiled rice or noodles.
