Ham, Pineapple & Swiss Empanadas
- 2 cups canned pineapple, drained, diced
- 1-1/4 cups OPEN PIT Original Restaurant Recipe Barbecue Sauce, divided
- 32 pieces biscuit dough rounds (1.2 oz. each), thinly rolled
- 2 cups deli ham, small diced
- 1-1/3 cup Swiss cheese, small diced
- Barbecue Salsa
- 1 cup OPEN PIT Original Restaurant Recipe Barbecue Sauce
- 1 cup salsa
- Combine 2 cups pineapple and 1/4 cup barbecue sauce (or 1/2 cup pineapple and 1 Tbsp.
- barbecue sauce for trial recipe); set aside.
- Brush each dough piece with 1/2 Tbsp.
- barbecue sauce.
- Fill each with 1 Tbsp.
- each ham and pineapple mixture, and 2/3 Tbsp.
- cheese.
- Fold dough over filling into half-circle; crimp dough to seal.
- Place on parchment paper-lined sheet pans.
- Bake in 350 degrees F standard oven 10 to 15 min.

- Meanwhile, prepare Barbecue Salsa by combining ingredients.
- Serve 2 empanadas with 1 Tbsp.
