Duck Confit
- 4 duck legs
- Duck fat- enough to cover legs entirely in roasting pan
- Thyme
- Rosemary
- 2 tablespoons garlic, chopped
- Salt and pepper, to taste
- Preheat oven: 300 degrees Season legs with herbs, garlic, salt and pepper.
- Place into roasting pan and cover completely with duck fat.
- Roast 2 1/2 hours.
- Remove legs from fat and place back in oven long enough to crisp skin.
