Duck Confit

  1. Preheat oven: 300 degrees Season legs with herbs, garlic, salt and pepper.
  2. Place into roasting pan and cover completely with duck fat.
  3. Roast 2 1/2 hours.
  4. Remove legs from fat and place back in oven long enough to crisp skin.
