Low-Fat Apple-Carrot Casserole

  1. Slice carrots thinly and cook in salted water for 5 minutes; drain.
  2. Slice apples and cook in clear water 5 minutes; drain.
  3. Layer carrots and apples in casserole.
  4. Mix sugar, flour and nutmeg; sprinkle on top.
  5. Dot with margarine.
  6. Pour orange juice over all.
  7. (Can be made ahead and baked just before serving).
  8. Bake 30-40 minutes in 350F oven.
