Diet Stuffed Peppers Recipe

  1. Parboil bell pepper for 2-3 min.
  2. Drain.
  3. Saute/fry onions, celery and grnd beef till vegetables are tender and meat is no longer pink.
  4. Add in mushrooms, cubed bread, seasoning and vegetable juice.
  5. You can use 3/4 of the juice if you do not want it too moist.
  6. An egg may also be added if you like.
  7. Stuff peppers, place in shallow pan.
  8. Pour 1/2 c. water around peppers.
  9. Bake at 350 degrees for 20-30 min.
  10. About 229 calories each.
