Salade Cuite (Cooked Salad) Recipe
- 6 lg. ripe tomatoes
- 3 green peppers
- 6 cloves garlic
- Veg. oil to coat bottom of fry pan
- Salt and pepper to taste
- 1/2 teaspoon paprika
- Scald and then peel tomatoes.
- Dice peppers and tomatoes.
- Chop garlic coarsely.
- Put all ingredients in cool pan.
- Mix thoroughly.
- Heat at medium high while stirring till peppers are soft.
- Let simmer uncovered, and stirring from bottom occasionally till all liquid has evaporated.
- Taste and, if necessary, season.
- Serve cool with Pita or possibly French bread.
