In A Jif Corn Bread

• 1 box jiffy corn bread mix, 8.5 ounce
• 1/4 cup frozen corn, thawed
• 3/4 cup grated cheddar cheese, divided
• 1/2 cup cooked black beans
• 1 thinly sliced jalapeno pepper
• 1 tbsp honey
• 1/4 cup sliced black olives
• 1/4 tsp salt
• 1 tbsp melted butter

1. Prepare corn bread mix according to package directions.
2. (One box, 1 large egg, 1/3 cup milk.)
3. Gently fold in other ingredients.
4. Leave out the jalapeno.
5. Place mix into well buttered 5x7 baking dish.
6. I also may use a quart round baking bowl
7. Top with the jalapeno peppers.
8. Bake in a preheated 400 degree Fahrenheit oven.
9. 18-20 minutes.
10. Serve hot.
11. I like a spoonful of chunky salsa and a dollup of sour cream on top.
