Sweet Potato Souffle
- 4 cups cooked mashed sweet potatoes
- 12 cup butter, or
- 12 cup margarine
- 34 cup sugar
- 2 teaspoons apple pie spice
- 4 eggs
- 1 tablespoon lemon juice
- 2 cups canned milk
- 1 12 cups crushed Ritz crackers
- 12 cup melted butter, or
- 12 cup melted margarine
- 1 cup brown sugar
- 1 cup pecans, chopped
- Mix mashed sweet potatoes, 1/2 cup butter or margarine, 3/4 cup sugar, apple pie spice, eggs, lemon juice, and canned milk and pour into a 9" X 13" glass casserole baking dish.
- Bake at 400 degrees for 20 minutes.
- While casserole is baking, mix remaining ingredients for topping.
- After removing from oven, sprinkle topping over the top and return to the oven for approximately 10 minutes or until lightly browned.
