Healthy Grains Breakfast Cookie
- 34 cup whole wheat pastry flour
- 12 cup Gold Medal all-purpose flour
- 12 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 12 teaspoon ground nutmeg
- 14 teaspoon salt
- 2 tablespoons unsalted butter
- 14 cup canola oil
- 14 cup brown sugar
- 3 tablespoons granulated sugar
- 1 egg
- 1 banana (smashed or pureed)
- 1 tablespoon blackstrap molasses
- 12 cup muesli (old fashioned style)
- 12 cup wheat bran (unprocessed miller's)
- 14 cup raisins
- 14 cup walnuts
- Preheat oven 350F.
- In large mixing bowl:.
- Blend butter, oil, sugar and brown sugar until creamy.
- Add egg, banana and molasses.
- Combine until smooth.
- Add both flours, baking soda, salt, cinnamon and nutmeg.
- Mix until well incorporated.
- Mixture is going to become thicker.
- When fully combined add muesli, wheat bran, raisins and walnuts.
- Fully combine.
- On large cookie sheet:.
- When all ingredients are fully blended use 1/4 cup measuring spoon as a scoop.
- Drop mixture into *almost* 1/4 cup servings onto cookie sheet - recipe will make 12 cookies.
- Dough is very sticky.
- Slightly flatten each serving with fingertips.
- Bake cookies for 12 - 14 minutes.
- Do not overcook.
- Let cookies cool slightly and enjoy!
- Leftovers keep well and can be enjoyed over the week.
