Apricot Pecan Sweet Potatoes Recipe

  1. Preheat the oven to 325F degrees.
  2. Lightly butter a shallow 1 1/2-qt baking dish.
  3. Cut the potatoes into pcs and put them into the prepared baking dish.
  4. Combine the preserves, brandy, and butter in a small saucepan and simmer over medium heat for 3 to 4 min.
  5. Spoon the mix over the potatoes and sprinkle with the pecans.
  6. Bake for 30 min or possibly till warm and bubbly.
