Meatloaf Ole
- 1 lb. lean ground beef (85%)
- 1/3 cup cholesterol-free egg product
- 2/3 cup medium salsa, divided
- 2/3 cup plain dry bread crumbs
- 1/4 cup diced green chiles or jalapeno peppers
- Mix ground beef, egg substitute, 1/3 cup salsa, bread crumbs, chiles or jalapenos.
- Shape into a 6 x 3-inch loaf.
- Place in lightly greased baking pan.
- Bake at 350F for 50 minutes.
- Pour remaining 1/3 cup salsa over meatloaf.
- Bake for 10 minutes more.
- Let stand 10 minutes before slicing.
- Garnish as desired.
