Indian-Style Vegetables
- 12 head cauliflower, chopped into florets
- 12 pint cherry tomatoes
- 12 large red onion, chopped
- 1 garlic clove, minced
- 2 large carrots, peeled and cut into coins
- 1 teaspoon olive oil
- 1 tablespoon garam masala
- 12 cup plain fat-free yogurt
- 1 jalapeno pepper, chopped
- Steam the cauliflower until fork-tender.
- Meanwhile, warm the olive oil and fry the onion, garlic, and carrots until soft.
- Add the tomatoes and cook until soft.
- Add cauliflower and combine.
- Add masala, yogurt, and pepper.
- Stir.
