Pork With Pasta (Ww)
- 1 12 cups whole wheat penne (or your favorite pasta)
- 6 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin, ground
- 1 teaspoon chili powder
- 12 teaspoon garlic powder
- 1 lb pork tenderloin, sliced
- 1 yellow bell pepper, sliced
- 2 red bell peppers, sliced
- 1 onion, cut into wedges
- 1 carrot, cut into julienne strips
- 1 (4 ounce) can green chilies, drained and chopped
- 1 zucchini, cut in half lengthwise and sliced
- Cook pasta according to package directions, drain and cover to keep warm.
- While pasta is cooking in a bowl combine 1 tablespoon of the oil, 2 tablespoons of the lime juice and the spices (cumin - garlic powder).
- Add pork and toss to coat.
- Heat the remaining oil in a skillet over medium high heat.
- Add pork mixture and cook about 5-10 minutes or until pork is browned.
- Add next 5 ingredients (peppers - chilies), cook, stirring for 3-5 minutes or until vegetables are tender.
- Stir in zucchini and the rest of the lime juice (4 T), cover and cook for 2-5 minutes longer.
- Stir in pasta and stir to combine.
