Mashed Plantains with Chorizo: Fufu

  1. Put the plantain pieces a pot large enough to hold them, and add water and milk.
  2. Add turmeric and season with salt and pepper.
  3. Bring to a boil, lower the heat and allow to simmer for 20 minutes.
  4. Drain and mash through a ricer.
  5. Lightly coat a separate pan with canola oil.
  6. Add chorizo and saute for 5 minutes over low heat.
  7. Add pureed plaintain and mix well.
  8. Serve with the Mojo.
