Easy Jalapeno Cilantro Chicken Salad
- 1 lb boneless skinless chicken breast
- 4 tablespoons light mayonnaise
- 12 cup vidalia onion, chopped
- 12 cup pickled jalapeno pepper, chopped
- 4 tablespoons fresh cilantro, chopped
- 1 tablespoon seasoning salt
- Heat chicken broth to boil on stovetop.
- Cook chicken in chicken broth until cooked through (about 8-10 minutes) Shred or chop chicken.
- Mix together with jalapeno, onion, mayo, seasoning salt and cilantro.
- Chill for at least 30 minutes.
