Cold Spiced Shrimp

  1. Wash unshelled shrimp, then place in a small pan.
  2. Add ginger, onion, sherry, salt and peppercorns.
  3. Barely cover with water.
  4. Bring to simmer, then cover and cook just until shrimp turn pink (about 3 to 4 minutes).
  5. Chill shrimp in stock, then shell and devein.
  6. Return to stock, cover and chill.
  7. Drain stock before serving.
