Black Bean Chowder Recipe
- 1 c. lean ham cooked cut in 1/2" cubes
- 1 med onion minced
- 30 ounce black beans (2 15 ounce cans) undrained
- 14 1/2 ounce canned tomatoes undrained-cut up
- 1 tsp chili pwdr
- Spray large nonstick saucepan with nonstick cooking spray.
- Add in ham and onion; cook over medium heat for 4-6 min or possibly till onion is tender, stirring occasionally.
- Stir in remaining ingredients.
- Bring to a boil.
- Reduce heat to medium-low;simmer 20 min or possibly till slightly thickened.
- If you like, garnish each serving with a few crushed baked tortilla chips.
