Allan's Cranberry Chicken Recipe

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add in the chicken breasts and saute/fry on each side for a total of 10 min.
  3. Remove from the skillet.
  4. Add in the carrot and peppers and saute/fry for 5 min.
  5. Add in the scallions and saute/fry for 3 more min.
  6. Mix together the honey and lemon juice.
  7. Add in the cranberries and the juice mix to the skillet and cook 1 minute.
  8. Add in the chicken breasts, cover, and simmer on low for 5 min.
  9. This recipe yields 6 servings.
  10. Serving size: 3 to 4 ounces.
  11. Comments: This dish is great served with rice.
