Boneless Pork Chops In A Cherry Sauce
- 1 tsp olive oil, extra virgin
- 3/4 cup fresh black cherries, pitted
- 1 1/2 tbsp shallots, finely chopped
- 1 1/2 tsp balsamic syrup, recipe attatched
- 1/2 cup vegetable stock
- 2 , 3/4 " thick boneless chops
- 1/2 tbsp olive oil, extra virgin
- 1/4 tsp salt
- 1/4 cup all-purpose flour
- 1/8 tsp ground pepper
- In a skillet, heat oil for the pork chops over medium heat.
- Season the flour with the salt and pepper.
- Dredge the chops in the flour.
- Cook chops 3 minutes each side.
- Remove from pan and place on a plate covered with aluminum foil to keep warm.
- Now start the sauce
- In the same pan that you used to cook chops add the extra oil for the sauce.
- Saute the shallots in oil over medium heat until they become transparent.
- About 2 minutes.
- Add the cherries, balsamic syrup and vegetable stock.
- Cook for 10 minutes until cherries soften and sauce reduces by 1/4.
- Place chops back into pan to warm through.
- Serve with sauce.
- A nice accompaniment is mashed potatoes , couscous or a simple risotto.
