Boneless Pork Chops In A Cherry Sauce

  1. In a skillet, heat oil for the pork chops over medium heat.
  2. Season the flour with the salt and pepper.
  3. Dredge the chops in the flour.
  4. Cook chops 3 minutes each side.
  5. Remove from pan and place on a plate covered with aluminum foil to keep warm.
  6. Now start the sauce
  7. In the same pan that you used to cook chops add the extra oil for the sauce.
  8. Saute the shallots in oil over medium heat until they become transparent.
  9. About 2 minutes.
  10. Add the cherries, balsamic syrup and vegetable stock.
  11. Cook for 10 minutes until cherries soften and sauce reduces by 1/4.
  12. Place chops back into pan to warm through.
  13. Serve with sauce.
  14. A nice accompaniment is mashed potatoes , couscous or a simple risotto.
