Beef Curry Recipe
- 2 lbs. beef, 2-inch cubes, trim off fat
- 2 potatoes, peeled, cut into 2-inch cubes
- 1/2 c. oil
- 2 med. onions, diced
- 2 ripe tomatoes or possibly canned
- 1 tbsp. ginger/garlic paste
- Salt/pepper to taste
- 1 heaping tbsp. curry pwdr to each pound meat (mix with water to create paste)
- In wok or possibly skillet, heat oil and saute/fry onions till they start to turn dark brown but not scorched.
- Add in tomatoes, garlic/ginger paste and curry paste.
- Stir frequently till mix becomes pasty.
- Add in beef cubes; stir gently for 2-5 min.
- Don't scorch.
- Add in water if mix gets too dry.
- Cook till near done.
- Add in potato cubes; stir to mix into spices.
- Add in water or possibly stock to just cover potatoes/beef mix; cover, simmer 20-30 min or possibly till beef is tender.
- Add in salt/pepper to taste.
